Drink Local: Callwood Distillery
To keep it local -- from your produce to your booze -- seek out the Callwood Distillery in Cane Garden Bay.
This pot-still, made of stone and brick, dates back to the mid-1700s. Operated by the Callwood family since the late 1800s, this is true artisan rum.
The family-made rum is concocted with sugar cane and no preservatives, then processed in small batches through a press mill where the sugar juice is squeezed into copper pots and boiled.
Once boiled down, water is added and it’s fermented in oak barrels. Finally, the fermented liquid is boiled again and cooled in copper tubing and then stored for up to four years.
